She is out of town so we are "taking care of him" so to speak. He is a good guy and honorary "Godfather." Jack has a Jewish Godfather (Uncle Tony, the "photographer" (also a manager at IBM) who always gets the great pics of Jack) since JD is Jewish (I am Lutheran.) We have made up new customs in our family since we have a special mix. (You should have seen our wedding. I wrote the ceremony, it was a very interesting mix!) If I am right, I think most people have an Uncle Bill somewhere in the family. LOL. I have one. He is a great guy and is really in love with Jack! I can't wait to see him. Kathy, Jack's Godmother is out of town, she went to Canada because her nephew had a baby. She is living it up baby sitting for a two week old she helped deliver. She helped deliver Jack, so it is old hat for her now! LOL. Elizabeth

I have some V8 juice that my dad's GF gave and I am using that instead of tomato juice as the base since it is basically the same thing and I don't have any tomato juice. LOL Happy Thanksgiving!

We are having a special dinner since it is our anniversary today. I am fixing some grilled sea bass with a spicy tomato coulis for a sauce. He is fixing the vegetables, and is in charge of getting the dessert from the neighbourhood bakery. Times being tough everywhere, we thought we will celebrate with a home-made dinner. It worked really well actually and tasted very good. I am going to DBF's parents' house for early Thanksgiving dinner tonight. Tomorrow we will be having dinner at my dad's. He totally missed it last year because he was in the ICU. My brother spent Thanksgiving at the hospital and I was at DBF's parents. This year we will all be eating together along with my dad's GF and her daughter and son-in-law. We will be having turkey, dressing, mashed potatoes, green beans, corn, rolls and a couple of other things I'm sure. I am in charge of dessert so we are having chocolate pie, chess pie and mini cheesecakes. If I find some really ripe bananas I may make my nephew a small (from scratch) banana pudding. Happy Thanksgiving!

There is so much to be thankful for in life, in spite of all its difficulties, sometimes. (Oh, I am not fond of V8 at all - I would rather cook with it too.) Now, what exactly is chess pie? You sound like you must be a terrific baker! Elizabeth, if you have not had Ethiopian food before (or even if you had), you are in for a treat! How exactly does your dinner club work? The legend goes that someone was making a pecan pie and realized they didn't have pecans. (Duh!) They went ahead and baked the pie. Someone asked what it was and they said, "just pie." Well with a southern accent "just" sounds like "jest" and "jest" became "chess". I don't know if that is true, but it IS similar to pecan pie without the pecans, so it is possible. It is made with eggs, sugar, brown sugar, vinegar and probably something else I am forgetting. I posted the recipe on here a long time ago. I'll try to remember to write it down and post it again sometime. I am not a very good cook, but I can do desserts very well. They are so much more fun, IMO. I make a Butterfinger dessert that is very good and extremely easy. I am making two chocolate pies because my nephew's mom's brother in law put in an order. I shared it with my husband and he loved it (anyone who feeds him pecan pie will have his undying loyalty, he is that fod of it). Thank you for your offer to re-post the recipe for the Chess Pie - I shall look forward to it! Unlike you, I cannot bake at all - was not brought up with any exposure to it - but I am a reasonably good cook. Oh, thanks also for your good wishes on our anniversary. I love pecan ANYTHING,Especially pie.I don't make it,but buy it at WalMart. (Not very often,as I don't know when to quit) Same with chocolate,Now that I am diagnosed with hypertension,there goes my chocolate...But I can console myself with Carob. Through the years raising four children of my own and half the neighborhood kids I did turn out to be an excellent cook.Thanks to the Better Homes and Garden cook book my mother in law gave me.And womens magazines. I didn't always follow the recipes to a t,but improvised with my own likes and dislikes. I didn't have exposure or access to food when I was growing up,(a lot of baloney sandwiches,My mom didn't cook much) Some of the neighborhood kids (in thier fifties now) still remark on the good meals they took at my house.

The turkey and roast beef were a hit. But the biggie for me was my attempt at a new dish. This year was my first attempt at a "from scratch" pecan pie. If I do say so as the chef, it was quite tasty and others agreed! Other menu items were my famous squash casserole, sauteed collards with dry sherry, oyster dressing, mashed sweet potatoes and green beans -- rolls & cornbread muffins. We had some delicious Pinot that my husband made last year and opened the first bottle today (I bought wine just in case his first batch didn't turn out so well ). Now the chef is stuffed and at her laptop relaxing. Thanksgiving blessings to all! Pepper

That does sound like a totally delicious and also 'gourmet' kind of Thanksgiving dinner. I too attempted something new for Thanksgiving this year. I am not an experienced baker, and also, our antique gas oven is in disrepair, so I am stuck with a small DeLonghi convenction toaster oven. With this imperfect apparatus, I produced a totally acceptable Sweet Potato, toasted pecans and pineapple Cake (I used baby sweet potatoes) and served it with a Whiskey Sauce. The Whiskey Sauce called for Jack Daniels, but what I had was a single-malt scotch Whiskey (from Dalwhinnie), so it turned out to be a Scotch Sauce. Given that our other nationality is Canadian, largely settled by the Scots, we thought this appropriate. Frances, I can believe that as a self-taught cook with the need to feed a bunch of kids, you turned out to be an excellent cook. My SIL who lives in NJ has turned out to have a training similar to yours, and she is one of THE best cooks I have ever had the pleasure of knowing. Your generosity of heart in feeding the neighbourhood kids would have enhanced the flavour of anything you ever cooked, anyhow! Care to share? We did the whole big meal too. My brother and mom were coming over at 10:00 and I thought that it was too early to do the appetizers that I had planned. Instead, I made a spinach quiche and sausage stuffed mushrooms. Then later in the day we had our Thanksgiving Day meal -- turkey, stuffing, sweet potatoes, mashed potatoes and gravy, green bean casserole, squash succotash, cranberry relish, pecan pie, and pumpkin pie. Needless to say, I'll be eating leftovers for awhile. :-)

So will we, but they have dwindled. My DBF finished off the banana pudding Saturday. I finished the deviled eggs and the chess pie. All the desserts are now gone except some oatmeal cookies. We still have ham, turkey, potatoes, corn, etc at my dad's house. A couple of more meals will get most of it. I lost Thanksgiving food, but we always seem to make too much.

We had Turkey, dressing, potatoes, green bean casserole (yes, the recipe on the fried onions can!) Pumpkin soup (a la Andy) apple and cherry pies, sugar and chocolate chip cookies, pumpkin cheesecake (with the sugar halved), and my mom's famous family recipe cranberry salad. It is so great to have leftovers in the fridge from this! They are going fast! Malar, we went to the restaurant, but it was closed early for the holidays, so we didn't get to go. Wah! The dinner club is a club I started over 10 years ago. I invite a group of friends (the group has changed over the years except for me) to go to a different restaurant every Wed. night. We have taken Jack with us most Wed.s since he was born, but just have started to not take him every time. It is fun to have an adult night out as well. (He is 2.5, now, so he is getting into his high energy stage, where it takes away from the dinner on some nights.) When I think about how much $$$ I have spent on all of those dinners...ak! I cut up a couple of yellow squash (small and firm), sprinkle with a few chopped/minced onions, add mushrooms, shredded cheddar cheese and Pepperidge Farm dry cornbread dressing -- create a couple of layers and finally add a tablespoon of olive oil. Microwave for about 10 minutes. My crew loves it and so do I!

You mix the salmon into mashed potatoes, eggs, parsley, and green onion. Coat the patties with bread crumbs and fry. I had some broccoli and a green salad on the side. I'm looking forward to the leftovers! I have to say that I'll buy the cleaned canned salmon from now on. They other was almost more than I could handle!

Is it possible to start from scratch? I would love to know the recipe, if you do not mind sharing! It sounds delicious. Perhaps one can grill or poach the fresh salmon and flake it in? Was this what was too hard to handle? I can see that it would take time, of course. I worry about farmed salmon ... Malar
