LOL, Frances - I would love having you here! I am glad you like the way I cook! My husband made a really lovely capellini the other night - flavoured with
garlic, olives, oregano from our own front-yard, and fresh tomatoes - he too is a very good cook and that keeps our "eat-at-home even if we are
over-worked otherwise" family happy and healthy.

A spicy beet root stew served over barley pilaf - that is what would be fore dinner tonight, along with a green salad.
Do you know - there are enormous health benefits to eating beets: check this out, if you are interested.

I like them a lot too, especially when they are home-pickled (my friend's mom, who is a famr-wife, fed her pickled beets in a wonderful salad to us a long
time ago - it is one of the most delicious meals I ever had, for it was also made with lots of love).
I don't think I can grow beets here in SoCal because it might not get cold enough ever, I will have to look into that. However, I saw this wonderful recipe - I can easily use this recipe with fresh beets from the Farmer's Market: Take a look - doesn't this look like they will be really tasty?

That does sound good....made my mouth water just looking at that photo! My mom used to pickle them, but I'm not sure where she got the beets...I was pretty
little and didn't pay attention. My m-i-l gets them at the State Fair in September and we always have them at Christmas time. I once told her she could
just buy me a jar of them for my gift (she never knows what to get me she says) but she just laughed and hasn't. I wasn't even joking!
Now, I am thinking I may have to go to the Fair myself! ![]()

State Fairs in the midwestern states are truly delightful! I have gone to the MN state fair a number of times, always coming home with really nice goodies. We
bought a bread knife there one time that gets used everyday for the last dozen or more years with no need to sharpen! Pickles at state fairs are always the
best - go on, go find your own pickled beets, Chris

Our tomatoes are just getting ripe so we have a fresh vegetable salad three times a week with lettuce and herbs from the garden also and then store bought
broc. and cauliflower, mushrooms, carrots, etc. It is my youngest child's favorite meal as we don't eat meat. We also have a large fruit salad at least
once a week. We had my three month old grandson, John Edward, for the weekend so there were plenty of bottles being warmed up. Would be interested in favorite
salad dressings if anyone has some to pass along.

Tonight's dinner was mussels w/linguine served with a white wine sauce and a delightful seafood salad. Yummy! All my clothes have gotten awfully tight
... oh well. I'm in the market for a new bike and will begin teaching my yoga classes again in about two weeks. I should slim down right in time for the
Thanksgiving feast. |

We are going to Space Aliens for all you can eat ribs where they actually let you take home the rest. So, basically you can order some ribs to go after
you've already stuffed yourself !
It's a win-win! Leftovers on Thursday! YAY!

Zaru soba noodles (Japanese buckwheat noodles that contain some yam also in them), boiled, drained, rinsed and stir-fried with diced red onion, julienned red
bell pepper, finely chopped jalapeno (home grown!), garlic, ginger and pan-fried cubes of firm tofu (on a cast iron griddle), all dressed with a tahini/chili
sauce that I pulled together.
It was yummy and very comforting to our souls. |

Today being a Fall day for comfort food, my youngest daughter and I are on our way over to my oldest daughter's house on the horse farm to have chowder
soup bowls with my son, his wife and my new grandson Jack. They are bringing dessert so I can't fill in the blanks yet. Can't wait.....

I have a new vegan want-to-be in my house. My 14-year-old decided two months ago to give up meat. And she's not that fond of most veggies. She'll do
beans, rice, sometimes squash, mixed greens, corn, zucchini, green beans, eggplant -- hates tomatoes. She will eat sushi and fish. Anybody have any good snacks
or vegan recipes. Just looking at tofu, turns my stomach, but have in the past few weeks began to add that to her diet and she enjoys it.

Pepper, I think you will find many useful and usable recipes here: www.johnrussell.name/recipes/index-en.htm
I was brought up a vegetarian, in a wonderful, ancient and fabulous cooking tradition (Hindu and Indian). I am not a vegetarian any more, but almost 90 to 95% of my diet consists of grains, beans, lentils, vegetables and fruits. By the way, has your daughter become a vegan (a diet where absolutely no product that has anything to do with animals may be used - for example: all dairy, honey, etc. are forbidden) or has she become an ovo-lacto-pesco vegetarian? It sounds like she is at least a peso-vegetarian since she is willing to eat sushi and fish. Does she eat eggs and milk products? It makes a huge difference in what to recommend for an adolescent young girl with all these different restrictions. One needs to make sure that all of us, especially in our adolescence, need to watch the nutritional content of what we eat. If she is eating eggs, dairy and fish, your job is much, much easier making sure she gets balanced nutrition! |

Malar,
Thanks for the link! She's a pesco-vegetarian, (pescotarian as she calls herself) who is transitioning to become a vegan. We just left Earth Fare and picked up tofu flavored to taste like chicken nuggets. She's munching on them and mixed greens and very much a happy camper. Again, thanks for the link! Pepper |

Pepper, you may know already, but some foods have hidden meat. Marshmallows, gelatin, and especially cheese is a big problem, and some chocolate I have found
out. I have been a veg. since 1980, There is a great Vegetarian mag. that breaks down the different cat. We have eaten Boca Vegan Burgers here that have a
grilled flavor that we like and my daughter eats Smart Dogs ( all soy). Mostly we eat vegetable salad three times a week, our favorite meal but have been
trying receipes from the mag. too.
